  • 1-1/4 cup all-purpose flour
  • 1 TBSP + 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1-1/2 cup Bran
  • 1-1/4 cup milk
  • 1 egg
  • 1/3 cup vegetable oil
  1. Stir together all dry ingredients. Set aside.
  2. Combine bran and milk – let set for 1-2 minutes.
  3. Add in egg and oil, mix well.
  4. Stir into dry ingredients until combined.
  5. Pour into muffin tins.
  6. Bake at 400 degree for 25 minutes for regular muffins.
  7. Bake approximately 12-15 minutes for mini muffins. Baking times may vary.
  8. Test for doneness.
