- 1-1/4 cup all-purpose flour
- 1 TBSP + 1/2 tsp baking powder
- 1/2 tsp salt
- 1-1/2 cup Bran
- 1-1/4 cup milk
- 1 egg
- 1/3 cup vegetable oil
- Stir together all dry ingredients. Set aside.
- Combine bran and milk – let set for 1-2 minutes.
- Add in egg and oil, mix well.
- Stir into dry ingredients until combined.
- Pour into muffin tins.
- Bake at 400 degree for 25 minutes for regular muffins.
- Bake approximately 12-15 minutes for mini muffins. Baking times may vary.
- Test for doneness.
