- 1 cup all-purpose flour
- 1/4 cup sugar
- 4 tsp baking powder
- 3/4 tsp salt
- 1 cup cornmeal
- 2 eggs
- 1 cup milk
- 1/4 cup vegetable oil
- Stir together all the dry ingredients.
- Blend together the eggs, milk and oil.
- Add into the dry ingredients and stir just until smooth. Do not overbeat.
- Pour into muffins tins.
- Bake at 425 degrees for 18-20 minutes for regular muffins, 10-12 minutes for mini muffins.
