  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 4 tsp baking powder
  • 3/4 tsp salt
  • 1 cup cornmeal
  • 2 eggs
  • 1 cup milk
  • 1/4 cup vegetable oil
  1. Stir together all the dry ingredients.
  2. Blend together the eggs, milk and oil.
  3. Add into the dry ingredients and stir just until smooth. Do not overbeat.
  4. Pour into muffins tins.
  5. Bake at 425 degrees for 18-20 minutes for regular muffins, 10-12 minutes for mini muffins.
